Peanuts and Pig Tail Soup

Ingredients

  • peanuts 3 oz

  • pig tails 1 pc

  • dried tangerine peel 1/4 pc

Seasonings

  • wine 1 tbsp

  • salt 1 tsp

Method

  1. Rinse peanuts and soak in water for 2 hours. Cut pig tails at knuckles into sections and blanch in boiling water to remove blood, then rinse under cold water, and set aside.

  2. Soak dried tangerine peel until soft, scrape pith away and wash it clean.

  3. In pot put all the ingrediens, add in water. Bring to boil and turn to med-low heat. Boil until ingredients are tender and soup thickens. Add in seasonings and serve hot.
