梅菜蒸魚頭
Ingredients
big fish head 1 pc
preserved vegetable 1 stalk
shredded ginger 1 tbsp
diced spring onion 1 stalk
Seasonings
1.
wine 1 tsp
pepper pinch

light soy 1 tsp
sugar 1/2 tsp
cornflour 1/2 tsp
sesame oil pinch
wine 1 tsp
oil 1 tbsp
Method
Remove the gills of fish head. Rinse and wipe dry. Cut into small pieces. Mix with shredded ginger. Marinate with seasonings(1) for 20 minutes.
Soak and wash preserved vegetable. Squeeze dry and dice. Marinated with seasonings (2). Pour them over the fish.
Steam fish head over water for 8 minutes till done. Remove and Sprinkle with 2 tbsps boiling oil and diced spring onion. serve hot.
