Fried Fish with Long White Beans

  • long white beans 10 oz

  • garlic cloves 2 cloves

  • ginger 2 slices

  • wine 1 tsp


  • pepper pinch

  • salt pinch

  • sugar pinch

  • salt 1/2 tbsp

  • light soy 1 tsp

  • water 2/3 cup


  1. Rinse Long White beans and Section. Scald in salt, oil and water until cooked.

  2. Wash, wipe and rub seasoning on fish thoroughly for 1/2 hour. Drain and dust sides with cornflour evenly.

  3. Heat wok with 4 tbsp oil, add in ginger and fish. Shallow fry over low heat until golen, dish up.

  4. Heat 2 tbsp oil, stir-fry garlic and long white beans, return fish to wok, add sauce and fry together until sauce has reduced. Dish up and serve.
