long white beans 10 oz
garlic cloves 2 cloves
ginger 2 slices
wine 1 tsp
salt 1/2 tbsp
light soy 1 tsp
water 2/3 cup
Rinse Long White beans and Section. Scald in salt, oil and water until cooked.
Wash, wipe and rub seasoning on fish thoroughly for 1/2 hour. Drain and dust sides with cornflour evenly.
Heat wok with 4 tbsp oil, add in ginger and fish. Shallow fry over low heat until golen, dish up.
Heat 2 tbsp oil, stir-fry garlic and long white beans, return fish to wok, add sauce and fry together until sauce has reduced. Dish up and serve.
